  • 2 cups cooked rice (any type, but sticky or sushi rice works best)
  • 1/4 cup shredded cheese (optional)
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup finely chopped vegetables (optional, such as bell peppers or carrots)
  • 1 large egg
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil (for frying)
  • Salt and pepper, to taste

  1. Prepare the Ingredients:
    • In a large bowl, combine the cooked rice, shredded cheese, chopped green onions, and finely chopped vegetables, if using.
    • Add the egg, soy sauce, and sesame oil to the bowl. Mix everything together until well combined. Season with salt and pepper to taste.
  2. Shape the Rice Cakes:
    • Using your hands or a spoon, shape the rice mixture into small patties, about 2-3 inches in diameter and 1/2 inch thick. You should get about 8-10 rice cakes, depending on the size.
  3. Heat the Oil:
    • Heat the vegetable oil in a large nonstick skillet over medium-high heat.
  4. Cook the Rice Cakes:
    • Place the rice cakes in the skillet in a single layer, being careful not to overcrowd the pan. Cook for approximately 3-4 minutes per side, or until they turn golden brown and crispy.
    • You may need to cook the rice cakes in batches, depending on the size of your skillet. If so, add more vegetable oil as needed for each batch.
  5. Serve:
    • Transfer the cooked rice cakes to a paper towel-lined plate to drain any excess oil.
    • Serve the rice cakes hot, with soy sauce or your favorite dipping sauce on the side.
