For the Chicken Marinade:

  • 1 lb (500g) chicken breast or thighs, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch

For the Stir Fry:

  • 200g (7 oz) rice noodles
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1 onion, halved and thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 carrots, julienned
  • 1 cup snow peas, trimmed
  • 2 green onions, cut into 2-inch pieces
  • 1/4 cup chicken broth or water

For the Stir Fry Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon white pepper

Instructions

  1. Prepare the Chicken:
    • In a medium bowl, combine the sliced chicken with soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for at least 10 minutes.
  2. Prepare the Noodles:
    • Cook the rice noodles according to the package instructions. Drain and set aside.
  3. Prepare the Stir Fry Sauce:
    • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, and white pepper. Set aside.
  4. Stir Fry the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
    • Add the marinated chicken and stir-fry until it’s just cooked through, about 3-4 minutes. Remove the chicken from the skillet and set aside.
  5. Cook the Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the minced garlic and sliced onion, and stir-fry for about 1 minute until fragrant.
    • Add the bell pepper, carrots, snow peas, and green onions. Stir-fry for another 2-3 minutes until the vegetables are just tender.
  6. Combine and Finish:
    • Return the cooked chicken to the skillet with the vegetables.
    • Add the cooked rice noodles and pour the stir fry sauce over everything.
    • Pour in the chicken broth or water and toss everything together until well combined and heated through, about 2 minutes.
